This is his Pinot Noir, grown biodynamically in Buxieres sur Arce at the southern tip of Champagne, on the Kimmeridgian limestone that also underlies Chablis. It ferments with native yeasts in barrel and goes into bottle brut nature, meaning no sugar was added at the end to soften the edges. That takes nerve; it also means the
